Island Poké

Poke (poe-kay)-Hawaiian for "to section" or "to slice or cut", is a raw fish salad served as an appetizer in Hawaiian cuisine, and sometimes as an entrée.
It is Hawaiian’s king of food, definitely its soul food. It is eaten everywhere –from potlucks to elegant get-togethers. It is on the menu of five-star dining rooms, plate lunch stands, sushi restaurants and even food trucks. It is available wherever food is sold; supermarkets, wine shops, and warehouse clubs.

Today poke is popular not just in Hawaii but across the mainland. The difference between mainland poke and Hawaiian poke is that mainland poke is not only about fish salad, it is customizable! Many different bases, mix-ins, sauces and topping could be chosen to make endless combinations ending up a healthy, efficient and good value meal with layers of flavors and textures. In addition to the traditional raw fish; chicken, tofu, cooked scallops, and shrimp are alternative choices of proteins.
