Happy Cinco de Mayo! Celebrate with this quick recipe for homemade guacamole: Ingredients: 4 ripe avocados (reserve 1 avocado pit) ½ teaspoon salt and freshly cracked pepper to taste 1 diced jalapeño pepper ½ tablespoon diced red onion Minced cilantro leaves 2 limes Dice the avocados and loosely mash with a fork. Add remaining ingredients and garnish with the cilantro. Tip! Place an avocado pit in your guacamole to preserve the fresh green color.
